The tea sampling / washing process is a must during tea ceremonies in Taiwan. This process allows the hot water to rinse through the tea equipment and ‘wake up’ the leaf tea. The first brew is usually sampled by the scent / fragrance of the tea whilst the second brew (strictly the best brew) is enjoyed with your taste buds. I usually drink the first infusion when the tea leaves reveal its various characters.
